We’re proud to introduce you to Jaybird’s Restaurant located at 2600 North Ponce de Leon Boulevard or Highway 1 in beautiful St. Augustine, Florida. Previously the restaurant was an IHOP, but had been sitting idle for the last year.
We’re Jay and Margaret Martens and Rainer and Julie Martens, co-owners of Jaybird’s. We gutted the inside of the IHOP and built a completely new, open restaurant.

We are pleased and excited to introduce Chef Mark Langston as our new head chef at Jaybird’s, bringing 30 years of experience with exciting culinary favorite’s and creations for you to experience. "Using the best local products and fresh to the table ingredients is important", say’s Chef; "we want our guests to experience great food."
Chef Langston is excited to start introducing his daily breakfast and lunch specials as well as fresh made, in house, signature bakery items. He will be taking what we started at Jaybird’s to a whole new culinary level of excellence in Breakfast, Lunch and our Pizzeria.
Chef Langston is currently working on his cookbook, "Look Who’s Cooking", featuring local chefs from our Historic St. Augustine and Jacksonville Fl. He is a family man, married 29 years, with 6 children. His passions are, of course, cooking great food, motorcycles, fishing and the water.
From an owner’s perspective, Chef Langston has the leadership, cooking experience and great personality to make Jaybird’s many loyal guests for years to come. Please join us in welcoming Mark soon for Breakfast, Lunch and great Pizza.
And who are we? Jay and Margaret Martens are married and live in St. Augustine. The restaurant is foremost Margaret’s ambition who has been most instrumental in developing every aspect of Jaybird’s. She is the day-to-day manager of the restaurant. A long-time culinary aficionado as well as a retail store manager for many years, Jaybird’s is a dream-come-true for Margaret.
Jay has been a meat cutter for the past 40 years and retired from Publix in 2012. He joins Margaret in the operation of the restaurant by overseeing the facility and greeting guests. Jay’s notable contribution is the lending of his nickname to the name of the restaurant – “Jaybird’s.”
Rainer Martens, Jay’s brother, and his wife Julie have assisted in the planning and financing of the restaurant. Rainer has provided the photographs that are displayed throughout Jaybird's. You can read more about the photography by clicking here.
Rainer was a sport psychologist and professor at the University of Illinois for 16 years and then founded Human Kinetics, the world’s largest publisher of sports and physical activity information. He’s now retired and busy pursuing his passion for softball and photography.
Julie Martens received her Ph.D. from the University of Illinois in 1978. She was the first employee at Human Kinetics and rose to the position of Executive Vice President before she married Rainer in 1992. Julie is also retired, loves to travel, is a fine photographer, and now is passionate about pickleball.
